Traditionally, kale is harvested after the first fall frost. We have therefore chosen Saturday, 25.11.23 and the tables will be bending under our kale buffet. Even if the Urbachtal is not exactly one of the classic kale regions, we don’t miss out on this delicacy here and the conviviality that goes with eating kale is usually quickly established in the Schwälmer Stubb!
We start with delicious cold starters.
Then all kinds of hearty dishes gather around the kale as the main protagonist. We serve cabbage sausage, Mettenden, Pinkelwurst, so that you will find a large selection of sausages and there should be something for every taste. The famous spare ribs from the Urbachtal should of course not be missing from this buffet, because they go perfectly with the star of the evening! If you don’t know this combination yet, you should definitely try it! In contrast, roast smoked pork is another classic. Heiko’s carrot and endive mash is a much better accompaniment to kale than classic potatoes and will delight you! It is served with rendered bacon, bacon fat and jus.
But beware: although it is advisable to try everything, you should leave some room for the fantastic dessert, because anyone who has tried Heiko’s bread & butter pudding will be dreaming of this poem for a long time to come!
